Grape Varieties:
Verdicchio 85%, Chardonnay 15%. Guyot training System.
Vineyard:
2 hectares in the eastern side of the "Colle del Sole" (Sunny Hill) parcel, nearby Maiolati Spontini. This is a "pedemontana" (before mountains) area where alluvial clay and salty soil meet tectonic earth, rich in rocks and limestone.
Harvest:
Carried out between the end of August (Chardonnay) and early September (Verdicchio). Yeild 6.000 kg of grapes per hectare.
Wine Making:
A spontaneous fermentation, using indigenous yeasts, is made in steel tank at 13 degrees. After the "sur lie" with frequent “battonages, prolonged until the following spring, Elara goes into the bottle to get his sparkling and then rests, in the underground cellar, for 48 months in bottle with lees patiently waiting for his "degorgement".
