The early harvest – which takes place in the first half of September, when the fruit is still in the ripening phase – gives this oil unique organoleptic properties which cannot be recreated using fruit collected from subsequent harvests. The extremely small amount produced makes this oil a rare product, for true aficionados.

High class olive oil obtained directly from olives and only by mechanical processes.

Oil extracted in Italy from olives cultivated in Italy extracted with a centrifugation system with reduced environmental impact.
